Frank Scibelli - Founder
Frank began his career as a restaurateur in 1992 when he opened Mama Ricotta’s, his award-winning Italian restaurant, in Charlotte, North Carolina along with Plate Perfect Catering. Though Scibelli, an MBA graduate from Wake Forest University, enjoyed early success as a business consultant, his love of good food drew him toward the restaurant business.
Since then, the savvy restaurateur has merged his business acumen with his lifelong passion to become one of the foremost restaurateurs in Charlotte, pioneering the culinary scene with his innovative concepts.
Scibelli’s philosophy is simple: he creates restaurants that serve the food that he loves to eat, concepts that were formerly missing in the city. Then, he seeks out the best people to learn from, often traveling abroad to find them, and couples his food education with the best ingredients and scratch made cooking. Scibelli’s concepts focus on fine casual establishments.
Tom Dyrness - Executive Chef
Tom's life has been a journey centered on his passion for food. Tom began working in restaurants as a teenager. From this young age, he knew he wanted to be a chef. His adventures have taken him on culinary trips to such places as Panama, France, England, Mexico and Italy. After earning a culinary arts degree from Johnson & Wales, he explored the United States as he worked in restaurants in Boston, Nantucket, Colorado and San Diego.
One of the most influential experiences in Dyrness’ career was working for renowned chef Wolfgang Puck, first in Las Vegas and afterward at Spago in Palo Alto, where he served as executive sous chef. During his tenure with Wolfgang Puck Fine Dining Group, Dyrness learned that the customer is truly the driving force for restaurant operations. If a customer came into the restaurant on a busy night and asked for chicken noodle soup, chicken noodle soup is what chef Puck would serve. Dyrness carries that philosophy with him to this day.
The family-friendly environment of Charlotte attracted Dyrness to North Carolina in 2005, and he was introduced to the Queen City culinary scene. He joined the FS Food Group team as executive chef at Mama Ricotta’s. Dyrness enjoys working with owner Frank Scibelli to develop home-style Italian-American cuisine reminiscent of nostalgic dishes from Scibelli’s family table.
Vincent Delillo - General Manager
Vincent Delillo, “Vinnie,” began as General Manager at Mama Ricotta’s Spring of 2017. Having grown up working and learning the ins and outs of his family’s Italian restaurant.
Vinnie finds passion in authentic, quality, Italian cuisine with home-like hospitality. Vinnie has worked in a variety of professional establishments including Tutto Italia and Amicci Italian Restaurant providing expertise as a Level 2 Sommelier and Culinary Institute of America trained chef.
In his free time, Vinnie volunteers for the American Red Cross and local volunteer fire department.
